Crunchy & Crumbelicious Muesli Cookies 

After tasting all those different varieties of cookies nankathai and fruit biscuits from famous Hyderabad’s bakeries, I felt like baking some cookies too..
Tried these crunchy muesli cookies couple of times and thought of sharing it with you guys
Enjoy every crunch of it!!!
 

 

Ingredients
Quantity
Muesli Flour
1 ½ cup
All purpose flour
1 cup
Butter(Nutralite)
200 grams
Powdered Sugar
1 cup



Method
·       First grind the muesli in a mixer to a fine flour, you can also keep the flour a little coarse.
·       Strain the all purpose flour and add it to the muesli flour, mix it.
·       Preheat the oven to 160C or 325 F
·       Whip the butter slightly and add the sugar to it.
·       Gradually add the flour mixture and mix it 



·       In a piping bag pour the cookie mixture and pipe the cookies in round shape with a star nozzle, or else you can just scoop it with a tablespoon on a greased cookie tray.
·       Place the tray in the pre heated oven and bake for 20 to 25 minutes till the cookie turns light brown.
·       Place the cookies on a cooling rack for about 10 to 15 minutes and store them in an airtight container .
·       Makes around 30 cookies.

  • Muesli flour is high in fiber 
  • Simple to make, simply blend the muesli to fine or coarse powder and your fresh flour is ready.
  •  Muesli flour makes your cookies crunchy and they taste delicious.
  • I have used nutralite as the fat /butter which is cholesterol free.
  • These  cookies are good option for your occasional cookie binge :P
