Mangoes are often used to make preserves commonly known as murabba, which is prepared from raw mangoes, also an amazing thirst quenching mango drink called as Panha made from either raw or sweet mango.
Amras a fresh pulpy juice of mango with a hint of cardamom is eaten with puris in many parts of India, and every one relishes on it.
Raw mangoes are used to make pickles, which are an excellent accompaniment with any Indian food item
A variety of things like smoothies, ice cream, juices, fruit bars, aguas frescas, raspados, pies and sweet chili sauce, or are made from this heavenly fruit
Amchoor powder a spice made from dried unripe mango is used in variety of Indian curries, salads and drinks to add a tangy flavor.

Nutritious and Delicious Nothing can beat this one..... Curd Rice!!!



Curd Rice






Ingredients
Quantity
Curd/Yogurt Plain
 Regular or fat free 2 cups
Rice white or brown
3 cups cooked / steamed
Carrots
¼   cup finely chopped
Green Beans/French beans
¼ cup finely chopped
Green chilly
1 teaspoon finely chopped
Ginger
Curry leaves
Urad dal
Dried red chilly whole
1 tablespoon and 1 teaspoon finely chopped
6 to 7 leaves
1 tablespoon
3 medium
Oil/ghee
Mustard seeds
Asofetida
Salt
2 Tablespoon
2 teaspoon
1 teaspoon
To taste







Method
Let’s begin with the simplest and the yummiest recipe.

  • ·       First cook the rice i.e steam it, cover it and keep it aside.
  • ·       Time for tadka(seasoning) : In a large pan on a medium flame, pour the oil/ghee, add all the spices in following order i.e  asofiteda, mustard seeds, urad dal, green chilly, ginger, curry leaves, and dried red chillies now add the carrorts and french beans give them a stir, let this cook for around 5 mins until the veggies are cooked but at the same time they are crunchy (not over cooked) and here comes the delicious aroma... Close the flame.
  • ·       Now add the steamed rice to the tadka and mix it well, now add some salt to it mix it again and cover it.
  • ·       In a bowl take the curd/yogurt and whisk it well, add this to the rice pan and mix it.
  • ·       Garnish with coriander and serve with roasted pappad(optional) and sweet or tangy pickle of your choice J
  • ·       Serving size : serves 4 happy faces.
