So Soft So Spongy & Crumblelicious !!! Call it a Zebra,Ripple or the Icebox cake!

 





 



 
Hello friends this amazing zebra cake is super simple :)
Need to impress someone? simply bake this cake (sssh.. its our secret :P )
So lets get started !!!

 
Ingredients
Quantity
All Purpose Flour
1 ½ cup
Eggs
2 whole
Sugar
1 cup
Vegetable oil
½ cup
Vanilla extract
2 teaspoons
Baking powder
1 teaspoon
Baking soda
1 teaspoon
Cocoa Powder
Water/club soda
2 tablespoon
½ cup
 
 Method:
  • In a blender/mixer add the eggs and the sugar and blend it for 2 minutes till it becomes frothy. If you have an electric beater, its perfect! Beat the eggs with sugar until frothy.
  • Pour the egg mixture in a mixing bowl. Add the oil to the egg mixture and mix it.

  • Add the vanilla extract, mix.

  • Take 1 ½ cup flour, add baking powder and baking soda to it and strain the flour mixture.

  • Keep the ½ cup water/club soda ready, now gradually mix in the flour and water/soda separately in three parts to the egg mixture.

  • Whisk it until smooth with no lumps and should be of ribbon consistency.

  • Preheat your oven to 180C .

  • Divide the cake batter in 2 equal parts .

  • In a small bowl mix the cocoa powder with 1 tablespoon of water and make paste. Add this paste to one part of the batter.

  • You can pipe these two colour batter or you can simply use a 2 big spoons of same size like I did, one for each batter :)

  • Grease a round medium cake pan and alternately add the chocolate and vanilla batter (note: pour only in the center of the cake pan) one by one.
  • Bake for 35 minutes at 180 C.
Have this light and spongy slice for Tea time or as a Dessert with vanilla ice cream or simply anytime..

Raw mangoes are used to make pickles, which are an excellent accompaniment with any Indian food item
A variety of things like smoothies, ice cream, juices, fruit bars, aguas frescas, raspados, pies and sweet chili sauce, or are made from this heavenly fruit
Amchoor powder a spice made from dried unripe mango is used in variety of Indian curries, salads and drinks to add a tangy flavor.
