Mystery Pancake!
Mystery Ingredients

Rolled Oats

Skimmed milk (2% or fat free)

Cocoa powder

Butter, melted.

2 tablespoon

Egg

1 whole

Vanilla extract

1 teaspoon
|
Method:
- Blend the rolled oats to form oats flour.
- Mix all the dry ingredients (oats flour, all purpose flour, sugar, and cocoa powder)
- In a mixing bowl beat the egg and add the vanilla extract to it, add the butter and milk to the egg, mix it well. To this egg and milk mixture add the dry mixture and make an even smooth batter without lumps.
- Heat a large skillet or nonstick pan over medium heat, and coat with cooking spray.(I use the butter flavor spray when I substitute 2 tablespoon butter with 1 tablespoon vegetable oil :) )
- Pour 1/4 cupful of batter onto the pan, and cook until bubbles appear on the surface ( around 30 seconds ). Flip with a spatula, and cook until browned on the other side.
- Serve hot with drizzle of chocolate sauce/fresh cream or simply honey. Yum!!
- Makes around 10 Pancakes

For the kids it’s a healthy and tasty treat for breakfast and even in their snack box these pancakes stay soft, and for the mommies this recipe is easy and quick.
- For the kids snack box, you can also make pancake sandwiches with chocolate sauce in between.
- Why to have just delicious meal when you have an option of deliciously healthy meal :)
