Sweet Potato+Coconut milk Thai soup

7 to 8 finely chopped
1 stick

Brown sugar
Fish sauce/oyster sauce
Lime juice
Coriander leaves

2 table spoon coarsely chopped

Method:
- Pound the onion, garlic, chili and coriander stems together with a mortar and pestle, make a coarse paste or chop together finely.
- In a large saucepan, bring the vegetable or chicken stock and coconut milk to a simmer. Add the sweet potatoes, salt, and the above paste which we freshly made.
- Cook, about 15 minutes, stir occasionally, let the sweet potatoes to soften.
- Remove the lemon grass stick and pour the soup into blender and puree until completely smooth.
- Add the puree to the saucepan, and bring soup to a simmer and add brown sugar, fish sauce, and 2 tablespoons of lime juice. Stir well and add the coarsely chopped coriander to it.
- Serve immediately to explore the tangy, sweet, salty flavors of this unique Thai soup
