Simple yet so Flavorful ...Comfortable yet so Fine..... unique Thai Soup !!!!





Sweet Potato+Coconut milk Thai soup




Ingredients
Quantity
Chicken stock /Vegetable stock
1 cup
Coconut milk
200ml
Sweet potato
1 small peeled and chopped
Chilli
1 small (seeds removed) chopped
White onion small
½ thin sliced
Garlic
1 small clove diced
Coriander stems
Lemon grass
7 to 8 finely chopped
1 stick
Salt
Brown sugar
Fish sauce/oyster sauce
Lime juice
Coriander leaves
½ teaspoon
1 teaspoon
½ teaspoon
2 table spoon
2 table spoon coarsely chopped

 Method:
  • Pound the onion, garlic, chili and coriander stems together with a mortar and pestle, make a coarse paste or chop together finely.
  • In a large saucepan, bring the vegetable or chicken stock and coconut milk to a simmer. Add the sweet potatoes, salt, and the above paste which we freshly made.
  • Cook, about 15 minutes, stir occasionally, let the sweet potatoes to soften.
  • Remove the lemon grass stick and pour the soup into blender and puree until completely smooth.
  •  Add the puree to the saucepan, and bring soup to a simmer and add brown sugar, fish sauce, and 2 tablespoons of lime juice. Stir well and add the coarsely chopped coriander to it.
  • Serve immediately to explore the tangy, sweet, salty flavors of this unique Thai soup
