All purpose flour
Milk (fat free)

Method:
For the Kachori dough
In a mixing bowl add the all purpose flour, to it add salt ajwain and
mix well.
To the flour add the oil and the chilled milk and knead it properly
till the dough becomes soft around 5 minutes.
Cover the dough with plastic wrap and let it rest for 10 to 15 minutes.
For the Kachori Masala stuffing
Dry roast the ¼ cup besan and almond meal over medium flame until it
turns slightly golden brown.
Heat the oil in nonstick pan, keeping the flame to low, add the pudina
leaves followed by all the masalas,
salt, sugar and then add the besan and almond mixture.
Mix it properly making sure no lumps are formed and to it add the
sweet chutney followed by 3 tablespoon water.
Remove the pan from the heat and let the stuffing masala cool.
Final step : Making the kachori
Pre heat the oven at 425 F
Divide the stuffing masala into equal parts and roll them to small
balls.
Divide the dough into equal parts (around 10 to 12 ), roll them out
like small puris, place the masala ball at the centre and cover the stuffing
with the dough and seal it.
Tranfer them on a baking tray and bake them for 15 minutes (after 7
minutes turn the kachori side)
Now lower the tempreture to 375 F and bake the kachoris for 8 to 10
minutes.
Makes around 10 to 12 delicious kachoris .

- Make your own chaat at home : You can also make low fat or fat free dahi chaat using the mint and sweet chutney, some chopped onion and coriander and chaat masala to sprinkle :P
- Masala stuffing is something you can always change according to your taste,little more spicy / sweet , then why to buy something which is high in unwanted saturated fats when you can make it yourself :)
- Serve these kachoris with antioxidant rich mint chutney and sweet chutney.
