Frozen Berry Delight


This Summer treat yourself with Frozen Yogurt made at home..  

Its Simple Easy high protein low fat dessert which fits easily in your diet with no compromise on taste .... enjoy!!!

 I have used frozen strawberries, other fruits such as frozen raspberries, banana, mango, kiwi can also be used.

Frozen Yogurt(Frozen berry delight)
Ingredient
  Quantity
Frozen fruit                        2 cup
Flavored Vanilla
Greek yogurt                      200gm
Sugar                                   2 teaspoon 

  Method:

  • For frozen fruit, wash and cut the fruit in small pieces and freeze it for 8 to 10 hours.
  • Add the frozen fruit, greek yogurt and sugar together in a blender and create a smooth mixture.
  • Serve immediately.
  • Serves 2. 
  • Also can sprinkle a teaspoon of roca almonds for ones who love that extra sweetness ..Yum!!

Quinoa dosa/pancake



 Quinoa

 This Pseudo cereal tops in proteins,makes you feel fuller longer and tastes delicious..... 

With the busy lifestyle, just make the batter over the weekend and refrigerate it !! and the healthy dosa/Pancake is just few minutes away :)

Quinoa Dosa/Pancake with Corainder chutney

Ingredients:
Ingredient
Dosa/Pancake
Quantity
Quinoa whole
1 cup
Idli Rava
1 cup
Salt
Sambar powder
 Coriander Chutney
Fresh coriander
Green chilly 
Garlic clove 
Fresh grated coconut 
Salt 
To taste
2 teaspoon

Method:

  • Mix the quinoa and the idli rava and soak it in warm water for 8 hours or overnight.

  • After 8 hours drain the soaked mixture and blend it with 1 ½ cup of water.

  • Let the batter ferment for about 8 hours at room temperature.

  • After its fermented, add salt and sambar powder to it and mix well.

  • Heat a nonstick pan & spread the batter, drizzle little oil all over the surface of the dosa and also around its edges, after 1 to 2 minutes flip the dosa/pancake.
  • Serve hot with coriander chutney
  •  Serves 2 
  •  Note: you can also try making uttapas, can put a ladle full of batter and spread thickly and sprinkle chopped tomatoes and onions, cover and cook on medium heat, flip it over and cook the other side too.

 Quick Green Chutney

Blend all ingredients ( coriander (1cup), 1 clove garlic, 2 green chilies, 2 teaspoon of fresh grated coconut, pinch of salt and 2 tablespoon water))

Ragi cake

Here is a recipe which can be served as a healthy Energy bar or a tea time snack! Healthy snack with good source of Calcium for children. Enjoy!!!

Ragi Cake



Ingredients       
Quantity
Ragi flour
All purpose flour
1 cup
½ cup
Baking powder
1 teaspoon
Greek yogurt vanilla flavor
1 cup
Canola Oil
¾ cup
Sugar
½ cup
Dry fruit powder
2 teaspoon
Dates

Method:

  • Pre heat the oven at 350 F

  • In a mixing bowl add sugar, oil, Greek yogurt and whisk it well.

  • In a separate bowl, add the two different flours, baking powder and the dry fruit powder, mix well.

  • Add the flour mixture to the yogurt mixture and mix it well until the batter is plain with no lumps and has ribbon consistency. To this add the chopped dates and mix well.

  • Grease the cake pan with 3 to 4 drops of oil and pour the batter into it.

  • Bake for 40 to 45 minutes. Cool 5 minutes in pan, then invert onto a cooling rack and cool completely before slicing it.
  • Serves 6 .. Enjoy!! 
Quick Dry fruit Powder:
Blend together 2 teaspoons  of almonds, pistachio, cashew, walnuts and to it add a pinch of saffron and 1 teaspoon cardamom powder, mix well.
store it in refrigerator.
